I love pies, especially fruit pies. I love the crunchy buttery flakiness contrasted against the sweet tart fruit.
But honestly, I love making pies even more.
The marbled, pliability of the perfect pie dough and using my favorite rolling pin (hand made by my husband especially for me almost 14 years ago) to take that dough and transform it into a sturdy, yet meltingly fragile vehicle for an endless variety of local fruits is almost magical.
